Description

Indulge in these delightful Chocolate Granola Peanut Butter Cups featuring a crunchy granola base, creamy peanut butter filling, and a smooth dark chocolate topping.


Ingredients

  • 2 1/2 cups honey granola
  • 1/2 cup chopped peanuts
  • 2 teaspoons coconut oil
  • 3.5 oz dark chocolate, finely chopped
  • 1 cup peanut butter
  • 2 tablespoons peanut butter
  • 3 tablespoons honey
  • 12 slices of banana (optional)

Instructions

  1. Combine honey granola and chopped peanuts in a mixing bowl; add melted coconut oil and stir until coated. Press firmly into muffin cups.
  2. In another bowl, mix peanut butter, additional peanut butter, and honey until smooth.
  3. Spoon peanut butter filling into granola cups and smooth the top; add banana slices if desired.
  4. Mix dark chocolate and coconut oil in a bowl, microwave in intervals until melted and smooth, and drizzle over the filling.
  5. Chill in the refrigerator for 30 minutes or until chocolate hardens; freeze for a firmer texture if desired.
  6. Remove cups from muffin tin and serve chilled.

Notes

For storage, keep in an airtight container in the fridge for up to a week, or freeze separated with parchment paper.
