- 2 1/2 cups honey granola
- 1/2 cup chopped peanuts
- 2 teaspoons coconut oil
- 3.5 oz dark chocolate, finely chopped
- 1 cup peanut butter
- 2 tablespoons peanut butter
- 3 tablespoons honey
- 12 slices of banana (optional)
Instructions
- Combine honey granola and chopped peanuts in a mixing bowl; add melted coconut oil and stir until coated. Press firmly into muffin cups.
- In another bowl, mix peanut butter, additional peanut butter, and honey until smooth.
- Spoon peanut butter filling into granola cups and smooth the top; add banana slices if desired.
- Mix dark chocolate and coconut oil in a bowl, microwave in intervals until melted and smooth, and drizzle over the filling.
- Chill in the refrigerator for 30 minutes or until chocolate hardens; freeze for a firmer texture if desired.
- Remove cups from muffin tin and serve chilled.
Notes
For storage, keep in an airtight container in the fridge for up to a week, or freeze separated with parchment paper.
