Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter; press into the bottom of the prepared pan.
- In a separate bowl, beat the softened cream cheese with 1 cup of sugar until smooth.
- Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gently fold in the chocolate chips.
- Pour the cheesecake mixture over the prepared crust and spread evenly.
- Bake for 25-30 minutes until the center is set but slightly jiggly.
- Cool to room temperature, then refrigerate for at least 2 hours before cutting into squares.
