Ingredients

  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup cherry preserves
  • 1/2 cup chocolate chips (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Roll dough into small balls and place them on a baking sheet lined with parchment paper. Make an indentation in the center of each ball with your thumb.
  6. Fill each indentation with a small amount of cherry preserves.
  7. Bake for 12-15 minutes, or until the edges are set. Let them cool completely.
  8. Melt chocolate chips and drizzle over the cooled cookies for an extra touch. Enjoy!

Notes

For a neat thumbprint, dip your thumb in a little flour before pressing so the dough won’t stick. If your cherry preserves are thick, warm them a few seconds so they flow into the hole easily.
