- 1 ¼ cups all purpose flour (spooned and leveled)
- ½ cup + 2 tablespoons unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/3 teaspoon salt
- ½ cup unsalted butter (melted but not hot)
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 large egg (room temperature)
- 1 ½ teaspoons pure vanilla extract
- 1 ¼ cups chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and set aside two nonstick mini muffin pans.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In a large bowl, mix melted butter, granulated sugar, brown sugar, egg, and vanilla extract until smooth.
- Gradually combine dry ingredients with wet ingredients and stir until just combined.
- Fold in chocolate chips.
- Drop about 1 tablespoon of batter into each muffin cup and smooth the top.
- Bake for 12-16 minutes, checking for doneness around 12 minutes.
- Let cool in the pan for 20 minutes, then flip onto a cooling rack to release.
- Allow to cool completely before serving.
Notes
For best results, don’t overmix the batter. Check for doneness with a toothpick.
