Description

A rich and indulgent cake combining chocolate, coconut, and a creamy ganache that satisfies any sweet tooth.


Ingredients

  • 1 box chocolate cake mix (15.25 oz)
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 cup sweetened condensed milk
  • 1.5 cups sweetened shredded coconut
  • 1/2 cup powdered sugar
  • 1 cup heavy cream
  • 1.5 cups semisweet chocolate chips
  • 1 teaspoon vanilla extract
  • Extra shredded coconut (optional)
  • Chocolate shavings (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the chocolate cake mix, eggs, vegetable oil, and water. Mix until smooth. Pour into a greased 9×13-inch pan and bake for 25-30 minutes.
  2. While the cake is baking, stir together the sweetened condensed milk, shredded coconut, and powdered sugar in a mixing bowl until thick.
  3. After the cake has baked, cool it for about 10 minutes and spread the coconut mixture over the warm cake.
  4. For the ganache, heat the heavy cream until it simmers, pour over the semisweet chocolate chips, let sit for 1 minute, then whisk until smooth and stir in the vanilla extract.
  5. Pour the ganache over the coconut layer, spread evenly, and chill the cake for at least 1 hour before slicing.

Notes

Use a warm knife to slice the cake for cleaner cuts. Can be served with vanilla ice cream or fresh fruit.
