- 1 box chocolate cake mix (15.25 oz)
- 3 eggs
- 1/2 cup vegetable oil
- 1 cup water
- 1 cup sweetened condensed milk
- 1.5 cups sweetened shredded coconut
- 1/2 cup powdered sugar
- 1 cup heavy cream
- 1.5 cups semisweet chocolate chips
- 1 teaspoon vanilla extract
- Extra shredded coconut (optional)
- Chocolate shavings (optional)
Instructions
- Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the chocolate cake mix, eggs, vegetable oil, and water. Mix until smooth. Pour into a greased 9×13-inch pan and bake for 25-30 minutes.
- While the cake is baking, stir together the sweetened condensed milk, shredded coconut, and powdered sugar in a mixing bowl until thick.
- After the cake has baked, cool it for about 10 minutes and spread the coconut mixture over the warm cake.
- For the ganache, heat the heavy cream until it simmers, pour over the semisweet chocolate chips, let sit for 1 minute, then whisk until smooth and stir in the vanilla extract.
- Pour the ganache over the coconut layer, spread evenly, and chill the cake for at least 1 hour before slicing.
Notes
Use a warm knife to slice the cake for cleaner cuts. Can be served with vanilla ice cream or fresh fruit.
