Description

An indulgent chicken avocado melt featuring creamy avocado and spicy chipotle flavors, inspired by Panera’s famous version.


Ingredients

  • 1 cup cooked chicken, shredded or diced
  • 1 ripe avocado, mashed
  • ÂĽ cup chipotle mayo (store-bought or homemade)
  • 1 cup shredded Monterey Jack cheese
  • 2 slices of sourdough bread
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken Mixture: In a bowl, combine the shredded chicken, mashed avocado, and chipotle mayo. Mix well until all ingredients are blended. Season with salt and pepper according to your taste.
  2. Butter the Bread: Spread butter on one side of each slice of sourdough bread. This will help achieve a crispy, golden crust when grilling.
  3. Assemble the Sandwich: On the unbuttered side of one slice of bread, spread a generous amount of the chicken avocado mixture. Sprinkle the shredded Monterey Jack cheese over the mixture. Place the second slice of bread on top, with the buttered side facing out.
  4. Grill the Sandwich: Heat a non-stick skillet or griddle over medium heat. Place the sandwich in the skillet and grill for 3-4 minutes, or until the bottom is golden brown. Carefully flip the sandwich and cook the other side for an additional 3-4 minutes until the cheese has melted and the bread is golden.
  5. Serve: Once done, remove the sandwich from the skillet. Let it cool for a minute, then slice in half and serve warm.

Notes

This melt is delicious with a light salad, sweet potato fries, or tomato soup. Store leftovers in an airtight container for up to 2 days.
