Description

Ingredients

  • 1/2 cup mayonnaise
  • 12 chipotle peppers in adobo sauce, minced (plus 1 tsp of the sauce)
  • 1 tsp lime juice
  • 1/4 tsp garlic powder
  • 2 brioche buns, split
  • 2 sausage patties
  • 4 large eggs
  • 2 tbsp milk
  • 2 slices cheddar cheese
  • 1 tbsp butter
  • Salt and freshly ground black pepper (to taste)

Instructions

  1. Prepare the chipotle aioli: In a small bowl, combine the mayonnaise, minced chipotle peppers, adobo sauce, lime juice, and garlic powder. Whisk everything together until it is fully combined and smooth. Set it aside.
  2. Cook the sausage patties: Heat a large skillet over medium-high heat. Add the sausage patties and cook for 3-4 minutes on each side or until browned. Transfer to a plate.
  3. Toast the brioche buns: Lower the heat to medium. Spread butter on the cut sides of both brioche buns. Place the buns cut-side down in the skillet and toast for 1-2 minutes until golden brown. Remove from the skillet.
  4. Scramble the eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. Melt remaining butter in the skillet over medium-low heat. Pour in the egg mixture and cook gently, stirring occasionally, until soft and fluffy.
  5. Assemble the sandwich: Spread chipotle aioli on both halves of the toasted buns. On the bottom half, layer one sausage patty, half of the scrambled eggs, and a slice of cheddar cheese. Place the top bun on the sandwich and serve immediately.

Notes
