A flavorful and satisfying breakfast sandwich featuring chipotle aioli, sausage, scrambled eggs, and cheddar cheese.

- 1/2 cup mayonnaise
- 1–2 chipotle peppers in adobo sauce, minced (plus 1 tsp of the sauce)
- 1 tsp lime juice
- 1/4 tsp garlic powder
- 2 brioche buns, split
- 2 sausage patties
- 4 large eggs
- 2 tbsp milk
- 2 slices cheddar cheese
- 1 tbsp butter
- Salt and freshly ground black pepper (to taste)
Instructions
- Prepare the chipotle aioli: In a small bowl, combine the mayonnaise, minced chipotle peppers, adobo sauce, lime juice, and garlic powder. Whisk everything together until it is fully combined and smooth. Set it aside.
- Cook the sausage patties: Heat a large skillet over medium-high heat. Add the sausage patties and cook for 3-4 minutes on each side or until browned. Transfer to a plate.
- Toast the brioche buns: Lower the heat to medium. Spread butter on the cut sides of both brioche buns. Place the buns cut-side down in the skillet and toast for 1-2 minutes until golden brown. Remove from the skillet.
- Scramble the eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. Melt remaining butter in the skillet over medium-low heat. Pour in the egg mixture and cook gently, stirring occasionally, until soft and fluffy.
- Assemble the sandwich: Spread chipotle aioli on both halves of the toasted buns. On the bottom half, layer one sausage patty, half of the scrambled eggs, and a slice of cheddar cheese. Place the top bun on the sandwich and serve immediately.
Notes
For variations, consider using plant-based sausage or different cheeses.
