- 1 lb boneless, skinless chicken thighs, sliced
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 8 oz lo mein noodles
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 cup snap peas
- 3 green onions, chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon chili paste
- 1 tablespoon sesame oil
Instructions
- In a bowl, marinate the sliced chicken with soy sauce and cornstarch for 15 minutes.
- Cook the lo mein noodles according to package instructions, then drain and set aside.
- In a large skillet, heat vegetable oil over medium-high heat. Add the marinated chicken and cook until golden brown, about 5-7 minutes.
- Add the garlic, ginger, red bell pepper, and snap peas to the skillet, stirring frequently for 3-4 minutes until vegetables are tender-crisp.
- In a small bowl, whisk together the sauce ingredients: soy sauce, oyster sauce, chili paste, and sesame oil.
- Pour the sauce over the chicken and vegetables, stirring to coat evenly. Cook for an additional 2 minutes.
- Add the cooked lo mein noodles to the skillet, tossing everything together until well combined and heated through, about 2-3 minutes.
- Garnish with chopped green onions before serving.
Notes
Don’t overcook the chicken to avoid making it tough. Feel free to customize with different proteins or vegetables.
