Ingredients

Scale
  • 1 lb ground beef
  • 1 can chili beans
  • 1 cup cheddar cheese, shredded
  • 2 cups mashed potatoes
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

  2. In a skillet, heat the olive oil over medium heat. Add the chopped onions and bell peppers, and sauté until they soften.
  3. Add the ground beef, garlic powder, salt, and pepper. Cook until the beef is browned, stirring occasionally.
  4. Stir in the can of chili beans and let simmer for 5 minutes to blend the flavors.
  5. In a greased baking dish, layer the chili beef mixture evenly.
  6. Spread the mashed potatoes over the top, smoothing them out.
  7. Sprinkle the shredded cheddar cheese on top.
  8. Bake for 25-30 minutes until the cheese is bubbling and golden.
  9. Let cool slightly before serving.

Notes

For a vegetarian version, substitute ground beef with lentils or crumbled tofu.
