- 1 lb ground beef
- 1 can chili beans
- 1 cup cheddar cheese, shredded
- 2 cups mashed potatoes
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the chopped onions and bell peppers, and sauté until they soften.
- Add the ground beef, garlic powder, salt, and pepper. Cook until the beef is browned, stirring occasionally.
- Stir in the can of chili beans and let simmer for 5 minutes to blend the flavors.
- In a greased baking dish, layer the chili beef mixture evenly.
- Spread the mashed potatoes over the top, smoothing them out.
- Sprinkle the shredded cheddar cheese on top.
- Bake for 25-30 minutes until the cheese is bubbling and golden.
- Let cool slightly before serving.
Notes
For a vegetarian version, substitute ground beef with lentils or crumbled tofu.
