- 2 cups shredded cooked chicken
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 teaspoon taco seasoning
- 8–10 corn tortillas
- Oil for frying (if frying)
- Cooking spray (if baking)
- Sour cream and salsa for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C) if you choose to bake the taquitos.
- If you plan to fry them, heat oil in a skillet over medium heat.
- Combine the shredded chicken, shredded cheese, and taco seasoning in a bowl. Mix well until evenly combined.
- Warm the corn tortillas slightly in the microwave or on a skillet to make them pliable.
- Place about 2 tablespoons of the filling mixture in the center of each tortilla. Roll tightly and secure with a toothpick if needed.
- If frying, carefully add taquitos to hot oil; cook until golden brown and crispy. If baking, place on a baking sheet, spray with cooking spray, and bake for about 15-20 minutes until crispy and golden.
- Serve warm with optional sour cream and salsa.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat in the oven or air fryer for the best texture.
