Delicious chicken skewers marinated and coated, perfect for any occasion.

- 2 pounds boneless skinless chicken pieces
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 garlic cloves, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes
- 1 egg
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon salt (for coating)
- 1/4 teaspoon black pepper (for coating)
- Olive oil for frying or drizzling
Instructions
- In a bowl, whisk together olive oil, lemon juice, minced garlic, chopped parsley, salt, black pepper, and red pepper flakes to make the marinade.
- Add chicken pieces to the marinade and toss until well coated. Cover and let marinate for at least 30 minutes in the refrigerator.
- In a separate bowl, beat the egg. In another bowl, combine breadcrumbs, grated Parmesan cheese, salt, and pepper.
- Thread marinated chicken pieces onto skewers.
- Dip each skewer in the beaten egg before coating in the breadcrumb mixture.
- For frying, heat olive oil in a skillet over medium-high heat and cook skewers for 3–4 minutes on each side. For baking, preheat oven to 400°F (200°C) and bake for 15–18 minutes.
- Serve sprinkled with extra parsley or Parmesan cheese, and with lemon wedges or dipping sauce.
Notes
Allowing the chicken to marinate enhances flavors. Avoid overcooking to keep chicken moist.
