Description

Delicious chicken skewers marinated and coated, perfect for any occasion.


Ingredients

  • 2 pounds boneless skinless chicken pieces
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 egg
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt (for coating)
  • 1/4 teaspoon black pepper (for coating)
  • Olive oil for frying or drizzling

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, chopped parsley, salt, black pepper, and red pepper flakes to make the marinade.
  2. Add chicken pieces to the marinade and toss until well coated. Cover and let marinate for at least 30 minutes in the refrigerator.
  3. In a separate bowl, beat the egg. In another bowl, combine breadcrumbs, grated Parmesan cheese, salt, and pepper.
  4. Thread marinated chicken pieces onto skewers.
  5. Dip each skewer in the beaten egg before coating in the breadcrumb mixture.
  6. For frying, heat olive oil in a skillet over medium-high heat and cook skewers for 3–4 minutes on each side. For baking, preheat oven to 400°F (200°C) and bake for 15–18 minutes.
  7. Serve sprinkled with extra parsley or Parmesan cheese, and with lemon wedges or dipping sauce.

Notes

Allowing the chicken to marinate enhances flavors. Avoid overcooking to keep chicken moist.
