Description

Ingredients

  • 2 cups orzo pasta
  • 1 tablespoon olive oil
  • 1 pound chicken sausage (sliced)
  • 2 cups broccoli florets
  • 3 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sliced chicken sausage and cook until browned, about 5-7 minutes.
  3. Add minced garlic and cook for about 1 minute until fragrant.
  4. Toss in the broccoli florets, cooking for 2-3 minutes until they start to soften.
  5. Stir in the orzo, chicken broth, Italian seasoning, salt, and pepper; bring to a boil.
  6. Once boiling, reduce heat to a simmer, cover, and cook for 10-12 minutes, stirring occasionally.
  7. Remove from heat and stir in grated Parmesan until melted and combined.
  8. Garnish with fresh parsley and serve hot.

For a creamier texture, consider stirring in a splash of heavy cream before serving. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 2 months.
