Ingredients

  • 2 cups orzo pasta
  • 1 tablespoon olive oil
  • 1 pound chicken sausage (sliced)
  • 2 cups broccoli florets
  • 3 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the sliced chicken sausage to the pot and cook for 5–7 minutes, stirring occasionally, until browned.
  3. Add the minced garlic and cook for about 1 minute until fragrant.
  4. Toss in the broccoli florets and cook for 2–3 minutes until they begin to soften.
  5. Stir in the orzo, chicken broth, Italian seasoning, salt, and pepper. Bring this mixture to a boil.
  6. Once boiling, reduce the heat to a simmer. Cover the pot and let it cook for 10–12 minutes, stirring occasionally until the orzo is tender and most of the liquid is absorbed.
  7. Remove the pot from heat and stir in the grated Parmesan cheese until melted and well combined.
  8. Garnish with chopped fresh parsley and serve hot.

Notes

For a creamier dish, consider adding a splash of heavy cream just before serving. Customize with different vegetables or sausages as desired.
