- 2 cups orzo pasta
- 1 pound chicken sausage, sliced
- 2 cups broccoli florets
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- 1/2 cup grated Parmesan cheese (optional)
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the sliced chicken sausage and sauté for 5 to 7 minutes until golden.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the broccoli florets and cook for about 2 to 3 minutes until slightly tender.
- Stir in orzo, chicken broth, Italian seasoning, salt, and black pepper. Bring the mixture to a boil, then reduce to a simmer. Cover and cook for 10 to 12 minutes until the orzo is tender.
- Remove from heat and stir in grated Parmesan cheese until well blended. Serve hot topped with freshly chopped parsley.
