A delicious and hearty Chicken Saganaki featuring juicy chicken in a tomato feta sauce, perfect for weeknight dinners or special gatherings.
Ingredients

- 1–1.5 lbs boneless skinless chicken breast, cubed
- 1/4 cup olive oil
- 1 small onion, finely chopped
- 3–4 garlic cloves, sliced
- 14.5 ounces canned tomatoes, pureed
- 1/2 cup water
- 1 teaspoon dried oregano
- 1/2 teaspoon sugar
- Pinch of crushed red pepper flakes
- Salt and freshly ground black pepper, to taste
- 1 cup crumbled feta cheese
- 4–6 scallions, finely chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add cubed chicken and cook until golden brown, about 5-6 minutes.
- Remove chicken and set aside. In the same skillet, sauté onion for 3-4 minutes.
- Add garlic and cook for 1-2 minutes.
- Stir in pureed tomatoes, water, oregano, sugar, red pepper flakes, salt, and pepper. Simmer for 5 minutes.
- Return chicken to skillet, add feta and scallions, cover, and cook for 3-4 minutes.
Notes
Do not overcrowd the skillet to ensure the chicken browns properly. Fresh ingredients make a significant difference in flavor.
