  • 2 boneless, skinless chicken breasts (about 1.5 lbs total, sliced horizontally into 4 thin cutlets)
  • 1/2 cup all-purpose flour (for dredging)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 8 oz cremini mushrooms (wiped clean and sliced)
  • 1 large shallot (finely chopped)
  • 2 cloves garlic (minced)
  • 3/4 cup dry Marsala wine
  • 3/4 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tbsp fresh parsley (chopped, for garnish)

Instructions

  1. Prepare the chicken: If your chicken breasts are thick, cut them in half horizontally to create 4 thinner cutlets.
  2. Dredging: In a shallow dish, mix the flour, salt, and pepper. Coat each chicken cutlet in the flour mixture, shaking off any excess.
  3. Cooking the chicken: In a large skillet, heat the olive oil and butter over medium-high heat. Add two chicken cutlets and cook for 3-4 minutes per side until golden brown and cooked through. Remove and repeat with the remaining cutlets.
  4. Sautéing the mushrooms: Lower the heat to medium and add the mushrooms to the skillet. Cook for 5-7 minutes until browned.
  5. Add shallots and garlic: Stir in the chopped shallots and cook for 2 minutes, then add the minced garlic and cook for another 30 seconds.
  6. Deglazing with Marsala wine: Pour in the dry Marsala wine to deglaze, scraping up brown bits. Simmer for 2-3 minutes until reduced by half.
  7. Creating the sauce: Add chicken broth and heavy cream. Simmer for 5 minutes until slightly thickened.
  8. Finalize the dish: Return the cooked chicken to the skillet, spoon sauce over, and simmer for 1-2 minutes. Garnish with parsley and serve immediately.

Notes

Avoid overcrowding the pan when cooking chicken. Choose good quality dry Marsala wine for the best flavor.
