- 1 lb chicken breast, diced
- 2 cups butternut squash, peeled and cubed

- 1/2 cup chicken broth
- 1/2 cup heavy cream or crème fraîche
- 1/2 cup grated Parmesan cheese
- 1/4 tsp ground nutmeg
- 1/2 cup breadcrumbs (optional)
- Cooking spray or butter for greasing
Instructions
- Preheat your oven to 375°F (190°C).
- In a pan, heat olive oil over medium heat. Add the diced chicken and sauté until cooked through.
- Mix in the butternut squash, leeks, minced garlic, thyme, salt, and pepper. Cook until the vegetables start to soften, about 5-7 minutes.
- In a bowl, combine the chicken broth, heavy cream, and nutmeg, mixing well.
- Pour the creamy sauce over the chicken and vegetable mixture. Stir everything to combine.
- Transfer the mixture into a greased baking dish, spreading it out evenly.
- Sprinkle the grated Parmesan cheese on top and add breadcrumbs if you like.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden and bubbly.
- Let the dish rest for 10 minutes before serving.
