Ingredients

  • 1 lb chicken breast, diced
  • 2 cups butternut squash, peeled and cubed
  • 2 large leeks, cleaned and sliced
  • 2 cloves garlic, minced
  • 1 tsp thyme (fresh or dried)
  • Salt and pepper, to taste
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream or crème fraĂ®che
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp ground nutmeg
  • 1/2 cup breadcrumbs (optional)
  • Cooking spray or butter for greasing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a pan, heat olive oil over medium heat. Add the diced chicken and sauté until cooked through.
  3. Mix in the butternut squash, leeks, minced garlic, thyme, salt, and pepper. Cook until the vegetables start to soften, about 5-7 minutes.
  4. In a bowl, combine the chicken broth, heavy cream, and nutmeg, mixing well.
  5. Pour the creamy sauce over the chicken and vegetable mixture. Stir everything to combine.
  6. Transfer the mixture into a greased baking dish, spreading it out evenly.
  7. Sprinkle the grated Parmesan cheese on top and add breadcrumbs if you like.
  8. Bake in the preheated oven for 30-35 minutes, or until the top is golden and bubbly.
  9. Let the dish rest for 10 minutes before serving.
