- 1/2 lb Andouille sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 can diced tomatoes
- 2 cups okra, sliced
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Cooked rice for serving
- Green onions, chopped for garnish
Instructions
- Start by heating the vegetable oil in a large pot over medium heat.
- Add the chicken pieces in a single layer and cook until golden brown, about 5-7 minutes.
- Next, include the sliced Andouille sausage and let it cook for another 5 minutes until it starts to brown.
- Now, add the diced onion, bell pepper, celery, and minced garlic. Cook this mixture for about 5 more minutes until the vegetables are tender.
- Pour in the chicken broth and add the diced tomatoes and sliced okra.
- Season the mixture with Cajun seasoning, salt, and pepper to taste.
- Allow the gumbo to simmer for 30-40 minutes, stirring occasionally.
- Serve hot over cooked rice and garnish with chopped green onions.
