Ingredients

  • 1/2 lb Andouille sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 2 cups okra, sliced
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Cooked rice for serving
  • Green onions, chopped for garnish

Instructions

  1. Start by heating the vegetable oil in a large pot over medium heat.
  2. Add the chicken pieces in a single layer and cook until golden brown, about 5-7 minutes.
  3. Next, include the sliced Andouille sausage and let it cook for another 5 minutes until it starts to brown.
  4. Now, add the diced onion, bell pepper, celery, and minced garlic. Cook this mixture for about 5 more minutes until the vegetables are tender.
  5. Pour in the chicken broth and add the diced tomatoes and sliced okra.
  6. Season the mixture with Cajun seasoning, salt, and pepper to taste.
  7. Allow the gumbo to simmer for 30-40 minutes, stirring occasionally.
  8. Serve hot over cooked rice and garnish with chopped green onions.
