- 4 cups shredded cooked chicken
- 2 cups instant rice
- 1 can cream-style chicken soup (10.5 oz)
- 1 cup sour cream
- 1 cup frozen onion and bell pepper blend
- 1 can diced tomatoes with chilies (10 oz, undrained)
- 1½ cups chicken broth
- 1 packet fajita seasoning (1.12 oz)
- 2 cups shredded Mexican blend cheese, divided
Instructions
- Preheat your oven to 350°F (175°C) and spray a 9×13 baking dish with non-stick cooking spray.
- In a large mixing bowl, combine chicken, rice, chicken soup, sour cream, vegetables, diced tomatoes, chicken broth, and fajita seasoning. Stir until mixed, then add half of the shredded cheese.
- Pour the mixture into the prepared baking dish, cover tightly with aluminum foil, and bake for 35–45 minutes or until the rice is tender.
- Remove from the oven, take off the foil, sprinkle remaining cheese on top, and bake uncovered for an additional 5–10 minutes until cheese is melted.
Notes
For best results, use pre-cooked chicken. Adjust spices to taste and ensure tight cover during baking to retain moisture.
