Instructions
- In a mixing bowl, combine the shredded chicken, cottage cheese, enchilada sauce, shredded cheese, and all the spices. Mix until well combined and creamy.
- Microwave the mixture for 2–3 minutes or heat it in a skillet over medium heat, stirring once for an even texture.
- Spoon the warm chicken mixture into serving bowls, distributing evenly.
- Top with diced avocado, jalapeños, green onions, or fresh cilantro according to your preference, and enjoy!
