Ingredients

- 2 cups cauliflower rice
- 2 cups cooked shredded chicken
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup cream cheese
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup chopped green onions (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine cauliflower rice, shredded chicken, cream cheese, garlic powder, onion powder, salt, pepper, and chicken broth. Mix well until all ingredients are combined.
- Transfer the mixture to a greased baking dish and spread it evenly.
- Top with shredded cheese.
- Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
- If desired, garnish with chopped green onions before serving. Enjoy your healthy casserole!
