Description

A comforting casserole featuring shredded chicken, mixed vegetables, and fluffy biscuits, baked to golden perfection.


Ingredients

  • 3 cups shredded cooked chicken (rotisserie chicken works great)
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup milk
  • 1/2 cup sour cream
  • 2 cups frozen mixed vegetables (peas, carrots, corn, and green beans)
  • 1.5 cups shredded cheddar cheese (divided)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (16.3 oz) refrigerated biscuits (8 large biscuits)
  • 2 tbsp butter (melted)
  • 1/2 tsp garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Combine shredded chicken, cream of chicken soup, milk, sour cream, 1 cup of cheddar cheese, frozen mixed vegetables, garlic powder, onion powder, thyme, salt, and pepper in a large bowl. Stir until well combined.
  3. Pour the chicken mixture into the prepared baking dish and spread it out evenly. Sprinkle with the remaining 1/2 cup of cheddar cheese.
  4. Arrange the biscuits on top of the filling.
  5. Whisk together the melted butter and 1/2 tsp of garlic powder in a small bowl. Brush this mixture over the tops of the biscuits.
  6. Bake for 25-30 minutes, or until the filling is bubbly and the biscuits are golden brown.
  7. Let it stand for 5 minutes before serving.

Notes

For best results, do not overmix the ingredients and ensure to use fresh refrigerated biscuits for optimal fluffiness.
