Description
Chicken bell pepper ranch burritos combine juicy shredded chicken, sweet sautéed bell peppers, creamy ranch sauce, and melty cheese—all wrapped in a crispy grilled tortilla.
Ingredients
2 cooked chicken breasts, shredded
1 tablespoon olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1/2 red onion, sliced
1 packet ranch seasoning
1/2 cup sour cream
1 cup shredded cheddar cheese
4 large flour tortillas
Optional: chopped cilantro, lime wedges, black beans, corn
Instructions
1. Heat olive oil in a skillet. Add sliced peppers and onion. Sauté for 6–8 minutes until soft and charred.
2. Mix sour cream with ranch seasoning in a bowl. Let sit.
3. Toss shredded chicken in the ranch sauce until coated.
4. Warm tortillas in a skillet or microwave for easier rolling.
5. Layer each tortilla with chicken, veggies, and cheese. Add extras if desired.
6. Roll tightly by folding the bottom, tucking in sides, and rolling.
7. Grill in a skillet over medium-high heat, seam-side down first, for 2–3 minutes per side until crispy.
Notes
Use rotisserie chicken to save time.
Add black beans or corn to increase fiber.
Swap sour cream with Greek yogurt for a lighter version.
Wrap in foil to freeze or refrigerate burritos for meal prep.
