Ingredients

- 2 cups cooked chicken breast, shredded
- 1 ripe avocado, mashed
- 1 cup cherry tomatoes, halved
- 1 cup lettuce, shredded
- 1/4 cup red onion, thinly sliced
- 4 whole wheat tortillas (10-inch)
- 1/4 cup Greek yogurt or mayonnaise
- 1 tablespoon lime juice
- Salt, to taste
- Pepper, to taste
Instructions
- Combine the mashed avocado, Greek yogurt (or mayonnaise), lime juice, salt, and pepper in a mixing bowl. Mix until smooth.
- If using leftover chicken, ensure it’s shredded. If cooking fresh chicken, grill or sauté seasoned chicken breasts in a skillet over medium heat until cooked through, about 10 minutes. Let it cool and then shred.
- Take a tortilla and spread a layer of the avocado mixture evenly over the surface.
- Top with shredded chicken, cherry tomatoes, lettuce, and red onion.
- Fold the sides of the tortilla inward, then roll it up tightly from the bottom.
- Repeat steps 3 to 5 for the remaining tortillas.
- Slice the wraps in half diagonally and serve immediately or wrap in parchment paper for on-the-go enjoyment.
Notes
Use ripe avocado for the best flavor and fresh ingredients for the best crunch.
