  • 1 cup black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (optional)
  • Lime wedges (for serving)

Instructions

  1. Prep the Ingredients: Start by cooking the rice if you haven’t done so already. Shred the cooked chicken and chop the avocado.
  2. Mix the Filling: In a large bowl, combine the shredded chicken, diced avocado, cooked rice, black beans, corn, salsa, and shredded cheese. Add olive oil, salt, and pepper to taste. Mix until well combined.
  3. Warm the Tortillas: Heat a skillet over medium heat. Warm each tortilla in the skillet for about 10 seconds on each side.
  4. Assemble the Burritos: Place about 1 cup of the filling mixture in the center of each tortilla. Fold the sides over and roll from the bottom up tightly.
  5. Cook the Burritos: If desired, cook the burritos seam-side down in the skillet for 2-3 minutes on each side until golden brown.
