- 1 ripe avocado, diced
- 1 cup cooked rice (white or brown)
- 1 cup black beans, drained and rinsed
- 1 cup corn (canned or frozen)
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Fresh cilantro, chopped (optional)
- Lime wedges (for serving)
Instructions
- Prep the Ingredients: Start by cooking the rice if you haven’t done so already. Shred the cooked chicken and chop the avocado.
- Mix the Filling: In a large bowl, combine the shredded chicken, diced avocado, cooked rice, black beans, corn, salsa, and shredded cheese. Add olive oil, salt, and pepper to taste. Mix until well combined.
- Warm the Tortillas: Heat a skillet over medium heat. Warm each tortilla in the skillet for about 10 seconds on each side.
- Assemble the Burritos: Place about 1 cup of the filling mixture in the center of each tortilla. Fold the sides over and roll from the bottom up tightly.
- Cook the Burritos: If desired, cook the burritos seam-side down in the skillet for 2-3 minutes on each side until golden brown.
- Serve: Cut the burritos in half and serve warm with lime wedges and extra salsa on the side.
