Description

Delicious and filling Chicken Avocado Burritos, perfect for busy days or impressing friends and family.


Ingredients

  • 2 cooked chicken breasts, shredded
  • 1 ripe avocado, mashed
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1/2 cup salsa
  • Salt and pepper to taste
  • Optional toppings: sour cream, cilantro, lime juice

Instructions

  1. In a bowl, combine the shredded chicken and mashed avocado. Season with salt and pepper to taste, and mix until well coated.
  2. Lay out a tortilla flat on a clean surface. Scoop a portion of the chicken and avocado mixture into the center.
  3. Sprinkle cheese over the mixture and drizzle salsa on top.
  4. Fold the sides of the tortilla in, then roll it up tightly from the bottom to top.
  5. Repeat with remaining tortillas and filling.
  6. Heat a skillet over medium heat. Place each burrito seam side down and cook for 2-3 minutes until golden brown. Flip and repeat on the other side.
  7. Serve warm with desired toppings.

Notes

For best results, use fresh tortillas and adjust seasoning to taste. Leftovers can be stored in an airtight container for up to 3 days in the refrigerator, or frozen for up to 2 months.
