Delicious and filling Chicken Avocado Burritos, perfect for busy days or impressing friends and family.
Ingredients

- 2 cooked chicken breasts, shredded
- 1 ripe avocado, mashed
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1/2 cup salsa
- Salt and pepper to taste
- Optional toppings: sour cream, cilantro, lime juice
Instructions
- In a bowl, combine the shredded chicken and mashed avocado. Season with salt and pepper to taste, and mix until well coated.
- Lay out a tortilla flat on a clean surface. Scoop a portion of the chicken and avocado mixture into the center.
- Sprinkle cheese over the mixture and drizzle salsa on top.
- Fold the sides of the tortilla in, then roll it up tightly from the bottom to top.
- Repeat with remaining tortillas and filling.
- Heat a skillet over medium heat. Place each burrito seam side down and cook for 2-3 minutes until golden brown. Flip and repeat on the other side.
- Serve warm with desired toppings.
Notes
For best results, use fresh tortillas and adjust seasoning to taste. Leftovers can be stored in an airtight container for up to 3 days in the refrigerator, or frozen for up to 2 months.
