- 1 lb chicken, shredded
- 4 cups chicken broth
- 1 cup milk
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup butter, melted
- 1 egg
- 1/2 teaspoon pepper
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
Instructions
- In a large pot, heat the chicken broth over medium heat. Add the shredded chicken, onion, celery, and carrots. Cook until the vegetables are tender.
- In a separate bowl, mix together the flour, baking powder, salt, and pepper.
- In another bowl, combine the milk, melted butter, and egg. Add to the dry ingredients and stir until just combined.
- Drop spoonfuls of the dumpling mixture into the simmering broth. Cover and cook for about 15 minutes, or until the dumplings are cooked through.
- Serve warm for a comforting meal.
Notes
Don’t overmix the dumpling batter and use fresh ingredients for better flavor.
