Description

Delicious jumbo pasta shells filled with a creamy chicken and cheese mixture, topped with rich Alfredo sauce.


Ingredients

  • 20 jumbo pasta shells (plus extra for backups)
  • 2 cups cooked shredded chicken (rotisserie chicken works great)
  • 1.5 cups ricotta cheese (whole milk preferred)
  • 1.5 cups shredded mozzarella cheese (divided)
  • 0.5 cup grated Parmesan cheese (for filling, freshly grated preferred)
  • 1 large egg
  • 2 teaspoons garlic powder
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons butter (for Alfredo sauce)
  • 2 cloves garlic (minced)
  • 1.5 cups heavy cream
  • 1.5 cups grated Parmesan cheese (for Alfredo sauce)
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon nutmeg (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook jumbo pasta shells according to package instructions until al dente (about 9-10 minutes). Drain and cool for 5 minutes.
  3. In a large bowl, mix shredded chicken, ricotta, 1 cup mozzarella, Parmesan, egg, garlic powder, parsley, basil, salt, and pepper until creamy.
  4. In a skillet, melt butter over medium heat, then add minced garlic and sauté for 1-2 minutes. Stir in heavy cream and simmer, then whisk in Parmesan cheese until thickened (about 3-4 minutes). Season with black pepper and nutmeg.
  5. Spread 1 cup of Alfredo sauce in a baking dish. Stuff pasta shells with 2 tablespoons of chicken filling and arrange them in the dish, open side up.
  6. Pour remaining Alfredo sauce over stuffed shells, cover with foil, and bake for 25 minutes. Remove foil, sprinkle with remaining mozzarella, and bake an additional 10 minutes until golden.
  7. Let rest for 5 minutes before serving.

Notes

Ensure that each shell is covered with sauce to prevent drying out. Feel free to customize the filling with your favorite vegetables or cheese.
