- 1 lb Boneless, skinless chicken breasts (cut into 1-inch cubes)
- 1 tbsp Olive oil
- 2 cloves Garlic (minced)
- 1 tsp Italian seasoning
- 16 oz Potato gnocchi (store-bought)
- 15 oz Alfredo sauce (one jar, or homemade)
- 1.5 cups Shredded mozzarella cheese
- 0.5 cup Grated Parmesan cheese
- Salt and black pepper (to taste)
- 2 cups Fresh spinach (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken cubes with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Add the minced garlic to the same skillet and cook for about 30 seconds, until fragrant.
- Pour in the Alfredo sauce and add the Italian seasoning. Stir and bring to a gentle simmer.
- Stir in the uncooked gnocchi, cooked chicken, and optional fresh spinach into the sauce. Mix well to ensure everything is coated.
- Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the mixture in the skillet.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until the sauce is bubbling and the cheese is melted and lightly golden.
- Let the dish rest for 5 minutes before serving. Enjoy!
