Description

A warm, cozy dish made with tender chicken, creamy Alfredo sauce, soft gnocchi, and lots of cheese. Perfect for any day of the week.


Ingredients

  • 1 lb Boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 1 tbsp Olive oil
  • 2 cloves Garlic (minced)
  • 1 tsp Italian seasoning
  • 16 oz Potato gnocchi (store-bought)
  • 15 oz Alfredo sauce (one jar, or homemade)
  • 1.5 cups Shredded mozzarella cheese
  • 0.5 cup Grated Parmesan cheese
  • Salt and black pepper (to taste)
  • 2 cups Fresh spinach (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken cubes with salt and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Add the minced garlic to the same skillet and cook for about 30 seconds, until fragrant.
  5. Pour in the Alfredo sauce and add the Italian seasoning. Stir and bring to a gentle simmer.
  6. Stir in the uncooked gnocchi, cooked chicken, and optional fresh spinach into the sauce. Mix well to ensure everything is coated.
  7. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the mixture in the skillet.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the sauce is bubbling and the cheese is melted and lightly golden.
  9. Let the dish rest for 5 minutes before serving. Enjoy!
