Description

Soft and chewy cookies that capture the delightful flavors of hot cocoa with chocolate and marshmallow bursts.


Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows
  • 1/2 cup chocolate glaze (store-bought or homemade)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Mix together the cocoa powder, all-purpose flour, baking powder, and salt in another bowl.
  5. Gradually blend the dry ingredients into the creamed mixture.
  6. Fold in the mini marshmallows gently.
  7. Drop the cookie dough by rounded tablespoons onto ungreased baking sheets.
  8. Bake for 10-12 minutes, until the edges are set but the centers remain soft.
  9. Remove from the oven and let cool slightly before drizzling with chocolate glaze.

Notes

Chill the dough for 30 minutes if cookies spread too much while baking.
