Description

Delightful blondies infused with Biscoff cookies and topped with white chocolate, perfect for sharing or enjoying alone.


Ingredients

  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • ¾ cup packed light brown sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • 10 Biscoff cookies, chopped
  • 4 oz white chocolate, chopped
  • ½ cup Biscoff cookie butter

Instructions

  1. Preheat your oven to 350°F. Line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, whisk the melted butter, granulated sugar, and brown sugar together until smooth and glossy.
  3. Whisk in the eggs and vanilla extract until well-blended and slightly thickened.
  4. Add flour, baking powder, and salt to the wet ingredients. Stir gently until there are no dry streaks remaining.
  5. Fold in chopped Biscoff cookies and white chocolate chunks, reserving some for topping.
  6. Spread half of the blondie batter evenly into the prepared baking pan.
  7. Microwave the Biscoff cookie butter for about 15 seconds, then drizzle over the batter. Top with remaining batter and swirl lightly if desired.
  8. Sprinkle reserved cookie pieces on top and bake for 35 to 40 minutes, or until lightly golden and set.
