Delightful blondies infused with Biscoff cookies and topped with white chocolate, perfect for sharing or enjoying alone.

- ½ cup unsalted butter, melted
- ½ cup granulated sugar
- ¾ cup packed light brown sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- ¼ teaspoon salt
- 1 cup all-purpose flour
- ½ teaspoon baking powder
- 10 Biscoff cookies, chopped
- 4 oz white chocolate, chopped
- ½ cup Biscoff cookie butter
Instructions
- Preheat your oven to 350°F. Line an 8×8-inch baking dish with parchment paper.
- In a large bowl, whisk the melted butter, granulated sugar, and brown sugar together until smooth and glossy.
- Whisk in the eggs and vanilla extract until well-blended and slightly thickened.
- Add flour, baking powder, and salt to the wet ingredients. Stir gently until there are no dry streaks remaining.
- Fold in chopped Biscoff cookies and white chocolate chunks, reserving some for topping.
- Spread half of the blondie batter evenly into the prepared baking pan.
- Microwave the Biscoff cookie butter for about 15 seconds, then drizzle over the batter. Top with remaining batter and swirl lightly if desired.
- Sprinkle reserved cookie pieces on top and bake for 35 to 40 minutes, or until lightly golden and set.
Notes
Store blondies in an airtight container at room temperature for 3-4 days, in the refrigerator for up to a week, or freeze for up to 3 months.
