Description

A delightful cake that combines rich chocolate flavor with the unique sweetness of Cherry Dr Pepper, perfect for special occasions or casual desserts.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Cherry Dr Pepper
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup maraschino cherries, chopped
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup Cherry Dr Pepper
  • Chocolate shavings for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix together the flour, cocoa powder, sugar, baking soda, and salt.
  3. In another bowl, combine Cherry Dr Pepper, vegetable oil, eggs, and vanilla. Whisk until well blended.
  4. Gradually add the wet ingredients to the dry mixture and mix until combined. Gently fold in the chopped maraschino cherries.
  5. Pour the batter evenly into the prepared pans and bake for 25-30 minutes.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  7. While the cakes cool, beat softened butter until creamy, then gradually add powdered sugar and 1/4 cup Cherry Dr Pepper, mixing until smooth.
  8. Once the cakes are cooled, spread cherry buttercream between the layers and over the top of the cake.
  9. Garnish with chocolate shavings, slice, serve, and enjoy!

Notes

Don’t overmix the batter to avoid a dense cake. Use room temperature ingredients for fluffy results.
