A delightful cake that combines rich chocolate flavor with the unique sweetness of Cherry Dr Pepper, perfect for special occasions or casual desserts.

- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup Cherry Dr Pepper
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup maraschino cherries, chopped
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/4 cup Cherry Dr Pepper
- Chocolate shavings for garnish
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large bowl, mix together the flour, cocoa powder, sugar, baking soda, and salt.
- In another bowl, combine Cherry Dr Pepper, vegetable oil, eggs, and vanilla. Whisk until well blended.
- Gradually add the wet ingredients to the dry mixture and mix until combined. Gently fold in the chopped maraschino cherries.
- Pour the batter evenly into the prepared pans and bake for 25-30 minutes.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- While the cakes cool, beat softened butter until creamy, then gradually add powdered sugar and 1/4 cup Cherry Dr Pepper, mixing until smooth.
- Once the cakes are cooled, spread cherry buttercream between the layers and over the top of the cake.
- Garnish with chocolate shavings, slice, serve, and enjoy!
Notes
Don’t overmix the batter to avoid a dense cake. Use room temperature ingredients for fluffy results.
