Description
Soft cherry cobbler muffins with juicy cherries and buttery crumb topping. Perfect for breakfast or brunch.
Ingredients
1 3/4 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar
2 large eggs
1 tsp vanilla
3/4 cup buttermilk
1 1/2 cups cherries, pitted
Topping:
1/2 cup flour
1/4 cup sugar
3 tbsp cold butter
1/2 tsp cinnamon
Instructions
1. Preheat oven to 375°F (190°C). Line muffin tin.
2. Mix flour, baking powder, baking soda, salt.
3. Cream butter and sugars until fluffy.
4. Beat in eggs and vanilla.
5. Alternate adding dry mix and buttermilk.
6. Fold in cherries.
7. Divide into muffin cups.
8. Mix topping until crumbly, sprinkle over muffins.
9. Bake 20–22 minutes until golden.
10. Cool 5 minutes, then transfer to rack.
Notes
Fresh cherries give best flavor.
Pat frozen cherries dry if using.
Warm before serving to revive crumb topping.
