Description

A delightful Italian cookie combining the sweet and tart flavors of dried cherries with the nutty taste of toasted almonds, perfect for dipping.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup toasted almonds, chopped
  • 1 cup dried cherries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together sugar and softened butter in a large bowl until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla and almond extracts.
  4. In another bowl, combine all-purpose flour, baking powder, and salt. Gradually blend into the creamed mixture.
  5. Fold in chopped toasted almonds and dried cherries.
  6. Divide the dough in half and shape each half into a log about 12 inches long on a greased baking sheet.
  7. Bake for 25-30 minutes until golden brown.
  8. Cool for 10 minutes, then slice the logs diagonally into 1/2-inch thick slices.
  9. Place slices cut side down on the baking sheet and bake for an additional 10-15 minutes until crisp.
  10. Cool completely before serving or storing.
