Cheesy Ranch Potatoes with Smoked Sausage

Description

A comforting dish that combines tender potatoes, smoked sausage, and a creamy, cheesy sauce, perfect for family dinners or potlucks.


Ingredients

  • 4 cups (about 720 g) diced, peeled russet potatoes
  • 1 teaspoon (5 ml) olive oil
  • 1 (14-ounce, 397 g) package smoked sausage, sliced
  • 4 tablespoons (56 g) butter
  • 1/4 cup (32 g) all-purpose flour
  • 2 cups (480 ml) half-and-half or milk
  • 8 ounces (227 g) Velveeta cheese, cubed
  • 1 cup (113 g) shredded sharp cheddar cheese, divided
  • 1/4 teaspoon garlic powder
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9-inch square baking dish.
  3. Place diced potatoes into a pot of salted water and bring to boil. Cook until just tender, then drain and transfer to the baking dish.
  4. Heat a nonstick skillet over medium-high heat, add olive oil and brown the sliced sausage for about 5 to 7 minutes, then add to the baking dish.
  5. Melt butter in the skillet over medium heat, whisk in flour and cook for 1 minute.
  6. Slowly whisk in half-and-half, bring to a simmer, add garlic powder, and whisk until thickened.
  7. Reduce heat, add Velveeta and half of the cheddar cheese, stirring until melted. Season with salt and pepper.
  8. Pour cheese sauce over potatoes and sausage, and sprinkle remaining cheddar on top.
  9. Bake for 25 to 30 minutes or until cheese is bubbly and golden. Cover with foil if potatoes are undercooked and bake for an additional 10 minutes.

Notes

For a healthier version, consider using low-fat milk and turkey sausage, and add more vegetables to the mix.
