Instructions
- Preheat your oven to 350°F (175°C).
- Lightly grease a 9-inch square baking dish.
- Place diced potatoes into a pot of salted water and bring to boil. Cook until just tender, then drain and transfer to the baking dish.
- Heat a nonstick skillet over medium-high heat, add olive oil and brown the sliced sausage for about 5 to 7 minutes, then add to the baking dish.
- Melt butter in the skillet over medium heat, whisk in flour and cook for 1 minute.
- Slowly whisk in half-and-half, bring to a simmer, add garlic powder, and whisk until thickened.
- Reduce heat, add Velveeta and half of the cheddar cheese, stirring until melted. Season with salt and pepper.
- Pour cheese sauce over potatoes and sausage, and sprinkle remaining cheddar on top.
- Bake for 25 to 30 minutes or until cheese is bubbly and golden. Cover with foil if potatoes are undercooked and bake for an additional 10 minutes.
Notes
For a healthier version, consider using low-fat milk and turkey sausage, and add more vegetables to the mix.
