Ingredients

  • 1 pound smoked sausage (halal-certified, no pork), sliced
  • 4 cups baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 packet (1 oz) ranch seasoning mix (halal-certified)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream (optional, for serving)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). In a large bowl, toss the halved or quartered baby potatoes with olive oil, garlic powder, onion powder, and black pepper. Spread the seasoned potatoes in a single layer on a large baking sheet.
  2. Roast the potatoes for about 20-25 minutes until they become tender and golden-brown. Toss them halfway through for even cooking.
  3. After roasting, remove the baking sheet from the oven and add the sliced smoked sausage. Sprinkle the ranch seasoning over everything and toss to combine.
  4. Sprinkle shredded cheddar cheese evenly over the mixture and return to the oven for an additional 10-15 minutes until the cheese is melted and bubbly.
  5. Let the dish rest for about 5 minutes before serving. Garnish with fresh chopped parsley if desired and serve warm with sour cream on the side.
