Ingredients

  • 4 cups baby potatoes, halved or quartered

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream (optional, for serving)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Halve or quarter the baby potatoes and slice the smoked sausage into rounds.
  2. In a large bowl, combine potatoes, sausage, olive oil, ranch seasoning mix, garlic powder, onion powder, and black pepper. Toss until evenly coated.
  3. Spread the mixture onto a greased baking sheet or in a 9×13-inch baking dish. Bake for 25-35 minutes, stirring halfway, until the potatoes are tender and sausage is browned.
  4. Sprinkle shredded cheddar cheese over the baked mixture and return to the oven for another 5-10 minutes, until cheese is melted and bubbly.
  5. Let it rest for a few minutes before garnishing with parsley. Serve with sour cream, if desired.
