- 1 pound smoked sausage (halal-certified, no pork)
- 4 cups baby potatoes, halved or quartered
- 2 tablespoons olive oil
- 1 packet ranch seasoning mix (halal-certified)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream (optional, for serving)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Halve or quarter the baby potatoes and slice the smoked sausage into rounds.
- In a large bowl, combine potatoes, sausage, olive oil, ranch seasoning mix, garlic powder, onion powder, and black pepper. Toss until evenly coated.
- Spread the mixture onto a greased baking sheet or in a 9×13-inch baking dish. Bake for 25-35 minutes, stirring halfway, until the potatoes are tender and sausage is browned.
- Sprinkle shredded cheddar cheese over the baked mixture and return to the oven for another 5-10 minutes, until cheese is melted and bubbly.
- Let it rest for a few minutes before garnishing with parsley. Serve with sour cream, if desired.
