  3. Mix the shredded cheese, chopped green onions, sour cream, and egg into the mashed potatoes. Season the mixture with salt and pepper, ensuring everything is well combined.
  4. Shape the potato mixture into small balls, about the size of a golf ball. Roll each ball in breadcrumbs to coat them fully.
  5. Heat oil over medium heat in a large skillet. Once hot, carefully add the potato balls in batches to avoid overcrowding. Fry until they are golden brown and crispy, about 3-4 minutes per side.
  6. Remove the balls from the skillet and place them on paper towels to drain excess oil.
