- 1/4 cup sour cream
- 1 egg

Instructions
- Begin by peeling and cutting the potatoes into chunks. Boil them in salted water until they are fork-tender, about 15-20 minutes.
- Drain the potatoes and mash them in a large bowl. Allow them to cool for a few minutes before proceeding to the next step.
- Mix the shredded cheese, chopped green onions, sour cream, and egg into the mashed potatoes. Season the mixture with salt and pepper, ensuring everything is well combined.
- Shape the potato mixture into small balls, about the size of a golf ball. Roll each ball in breadcrumbs to coat them fully.
- Heat oil over medium heat in a large skillet. Once hot, carefully add the potato balls in batches to avoid overcrowding. Fry until they are golden brown and crispy, about 3-4 minutes per side.
- Remove the balls from the skillet and place them on paper towels to drain excess oil.
