- 1 lb kielbasa, sliced
- 1 cup uncooked rice
- 2 cups broccoli florets
- 3 cups chicken broth
- 2 cups shredded cheese (cheddar or your choice)
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, sautéing them until softened.
- Add the sliced kielbasa to the skillet and cook until browned.
- Stir in the uncooked rice and allow it to cook for a minute, absorbing the flavors.
- Pour in the chicken broth and bring the mixture to a boil.
- Reduce the heat to low, cover the skillet, and let it simmer for about 15 minutes.
- Add the broccoli florets, cover again, and cook for an additional 5-7 minutes until the rice is fully cooked and the broccoli is tender.
- Remove from heat and stir in the shredded cheese until it melts and becomes creamy.
- Season with salt and pepper to taste, and serve hot.
