Ingredients

  • 1 lb kielbasa, sliced
  • 1 cup uncooked rice
  • 2 cups broccoli florets
  • 3 cups chicken broth
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing them until softened.
  3. Add the sliced kielbasa to the skillet and cook until browned.
  4. Stir in the uncooked rice and allow it to cook for a minute, absorbing the flavors.
  5. Pour in the chicken broth and bring the mixture to a boil.
  6. Reduce the heat to low, cover the skillet, and let it simmer for about 15 minutes.
  7. Add the broccoli florets, cover again, and cook for an additional 5-7 minutes until the rice is fully cooked and the broccoli is tender.
  8. Remove from heat and stir in the shredded cheese until it melts and becomes creamy.
  9. Season with salt and pepper to taste, and serve hot.
