  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (14.5 ounce) can diced tomatoes with juice
  • 0.5 cup long grain white rice
  • 0.75 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Begin by crumbling the ground beef into a skillet over medium-high heat. Cook and stir until evenly browned, about 5 to 7 minutes. Drain off the grease.
  2. Stir in the cream of mushroom soup, diced tomatoes (with juice), and uncooked rice. Mix well to cover the rice.
  3. Cover and simmer over low heat, stirring occasionally, until the rice is tender, about 15 minutes.
  4. Preheat the oven’s broiler.
  5. Transfer the skillet contents to a casserole dish and spread evenly.
  6. Cover with the shredded mozzarella cheese.
  7. Broil until the cheese is melted and bubbly, about 3 to 5 minutes. Watch closely to prevent burning.
