- 1.5 lb ground beef
- 4 large russet potatoes, thinly sliced
- 1 medium onion, chopped
- 2 cups shredded cheddar cheese
- 1 can cream of mushroom soup
- ¾ cup milk
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper, to taste
- 2 tbsp olive oil
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 375°F and grease a 9×13-inch baking dish.
- Peel and slice potatoes into thin, even rounds. Set aside.
- Heat olive oil in a skillet. Add chopped onion and cook until soft. Add ground beef and cook until browned. Drain excess fat.
- Whisk together cream of mushroom soup, milk, garlic powder, paprika, salt, and pepper.
- Add half the sliced potatoes to the baking dish. Add half the ground beef. Add half the cheese. Repeat the layers.
- Pour the soup mixture evenly across the top.
- Cover with foil and bake for 60–70 minutes, or until potatoes are tender.
- Remove foil and bake an additional 5–10 minutes to brown the cheese.
- Garnish with parsley and let rest for 10 minutes before slicing.
Notes
For lighter options, consider using lean ground beef or low-fat cheese. Additional vegetables can be incorporated for extra nutrition.
