Description

Ingredients

  • 4 medium zucchinis
  • 1 pound ground beef
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the centers to create boats.
  3. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until softened.
  4. Add ground beef, cooking until browned. Drain excess fat.
  5. Stir in marinara sauce, season with salt and pepper, and simmer for 5 minutes.
  6. Fill zucchini boats with beef mixture and top with shredded cheese.
  7. Place boats on a baking dish and drizzle with olive oil.
  8. Bake for 25-30 minutes until the zucchinis are tender and cheese is melted.
  9. Garnish with fresh herbs if desired and serve.
