- 4 medium zucchinis
- 1 pound ground beef
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup marinara sauce
- Salt and pepper to taste
- Olive oil for drizzling
- Fresh herbs (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the centers to create boats.
- In a skillet, heat olive oil over medium heat. Sauté onions and garlic until softened.
- Add ground beef, cooking until browned. Drain excess fat.
- Stir in marinara sauce, season with salt and pepper, and simmer for 5 minutes.
- Fill zucchini boats with beef mixture and top with shredded cheese.
- Place boats on a baking dish and drizzle with olive oil.
- Bake for 25-30 minutes until the zucchinis are tender and cheese is melted.
- Garnish with fresh herbs if desired and serve.
