Easy and delicious Cheesy Ground Beef Quesadillas perfect for weeknight dinners or a quick snack.

- 1 lb ground beef
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1 small onion, diced
- 1 bell pepper, diced
- 1 taco seasoning packet
- Salt and pepper to taste
- Cooking oil (for frying)
Instructions
- Heat a small amount of cooking oil in a skillet over medium heat.
- Add the diced onion and bell pepper, cooking until softened, about 3-4 minutes.
- Add the ground beef and cook until browned, breaking it apart with a spatula.
- Stir in the taco seasoning and a splash of water; cook for an additional 2-3 minutes until well mixed.
- Remove the beef mixture from the heat and set aside.
- Place a tortilla in the skillet and sprinkle half with cheese. Then add a portion of the beef mixture on top of the cheese.
- Fold the tortilla over and cook until golden brown and crispy on both sides, about 2-3 minutes per side.
- Repeat with remaining tortillas, adding more oil to the skillet as needed.
- Slice the quesadillas and serve warm with salsa or sour cream for dipping.
Notes
For best results, choose cheese that melts well and watch the cooking heat to prevent burning.
