- 1 lb ground beef
- 2 medium potatoes, diced
- 1 red bell pepper, chopped
- 1 medium onion, chopped
- 1 can (4 oz) green chiles
- 1 cup shredded cheese (cheddar or Mexican blend)
- 2 tablespoons Mexican spice blend
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large skillet, heat a little olive oil over medium heat. Add the diced onions and red bell pepper, cooking until they soften.
- Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned.
- Stir in the diced potatoes and green chiles, along with the Mexican spice blend, salt, and pepper.
- Cover the skillet and cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender.
- Once the potatoes are soft, sprinkle the shredded cheese over the top. Cover again until the cheese is melted.
- Serve hot and enjoy your meal!
