Ingredients

  • 1 lb ground beef
  • 2 medium potatoes, diced
  • 1 red bell pepper, chopped
  • 1 medium onion, chopped
  • 1 can (4 oz) green chiles
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 tablespoons Mexican spice blend
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large skillet, heat a little olive oil over medium heat. Add the diced onions and red bell pepper, cooking until they soften.
  2. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned.
  3. Stir in the diced potatoes and green chiles, along with the Mexican spice blend, salt, and pepper.
  4. Cover the skillet and cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender.
  5. Once the potatoes are soft, sprinkle the shredded cheese over the top. Cover again until the cheese is melted.
  6. Serve hot and enjoy your meal!
