Ingredients

  • 2 boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper (to taste)
  • 12 oz twisted pasta (like fusilli or rotini)
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • 2 cups milk
  • 8 oz Velveeta cheese (cubed)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh parsley (chopped)

Instructions

  1. Cook the pasta in a large pot of salted water according to package directions; drain and set aside.
  2. Season the cubed chicken with garlic powder, onion powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium-high heat; cook the chicken until golden brown and cooked through, then remove from the skillet.
  4. Melt butter in the same skillet, add minced garlic, and sauté for 1 minute.
  5. Whisk in the milk and bring to a simmer, then add cubed Velveeta cheese and stir until melted.
  6. Add shredded cheddar cheese and stir until melted; then mix in the cooked pasta and chicken.
  7. Heat through for another 2-3 minutes, then stir in chopped parsley before serving.
