- 2 boneless, skinless chicken breasts (cut into 1-inch cubes)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper (to taste)
- 12 oz twisted pasta (like fusilli or rotini)
- 2 tablespoons butter
- 3 cloves garlic (minced)
- 2 cups milk
- 8 oz Velveeta cheese (cubed)
- 1/2 cup shredded cheddar cheese
- 1/4 cup fresh parsley (chopped)
Instructions
- Cook the pasta in a large pot of salted water according to package directions; drain and set aside.
- Season the cubed chicken with garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat; cook the chicken until golden brown and cooked through, then remove from the skillet.
- Melt butter in the same skillet, add minced garlic, and sauté for 1 minute.
- Whisk in the milk and bring to a simmer, then add cubed Velveeta cheese and stir until melted.
- Add shredded cheddar cheese and stir until melted; then mix in the cooked pasta and chicken.
- Heat through for another 2-3 minutes, then stir in chopped parsley before serving.
