Description

A hearty and comforting casserole combining chicken, broccoli, and rice in a creamy, cheesy sauce.


Ingredients

  • 3 cups boneless, skinless chicken breasts, diced
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup long-grain rice (uncooked)
  • 2 cups cheddar cheese, shredded
  • 1 can (10.5 oz) cream of chicken soup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 3 cups water or chicken broth

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9Ă—13-inch baking dish with cooking spray.
  3. In a skillet over medium heat, cook the diced chicken for about 5-7 minutes until golden brown and cooked through.
  4. Stir in broccoli florets and uncooked rice into the skillet with the chicken.
  5. Pour in water or chicken broth until everything is just covered.
  6. In a separate bowl, mix cream of chicken soup, garlic powder, onion powder, salt, pepper, and half of the shredded cheese until smooth.
  7. Add the creamy mixture to the skillet and stir until evenly coated.
  8. Transfer the mixture into the greased baking dish, spreading it out evenly.
  9. Top the casserole with the remaining cheese.
  10. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until bubbly and golden.
  11. Let it cool slightly before serving.
