- 3 cups boneless, skinless chicken breasts, diced
- 2 cups broccoli florets (fresh or frozen)
- 1 cup long-grain rice (uncooked)
- 2 cups cheddar cheese, shredded
- 1 can (10.5 oz) cream of chicken soup
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 3 cups water or chicken broth
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9Ă—13-inch baking dish with cooking spray.
- In a skillet over medium heat, cook the diced chicken for about 5-7 minutes until golden brown and cooked through.
- Stir in broccoli florets and uncooked rice into the skillet with the chicken.
- Pour in water or chicken broth until everything is just covered.
- In a separate bowl, mix cream of chicken soup, garlic powder, onion powder, salt, pepper, and half of the shredded cheese until smooth.
- Add the creamy mixture to the skillet and stir until evenly coated.
- Transfer the mixture into the greased baking dish, spreading it out evenly.
- Top the casserole with the remaining cheese.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until bubbly and golden.
- Let it cool slightly before serving.
Notes
