A comforting all-in-one dish combining chicken, broccoli, and rice with a delicious cheesy topping.

- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cups fresh broccoli florets
- 1 cup uncooked long-grain rice
- 2 cups shredded cheese (cheddar and mozzarella blend)
- 2 cups low-sodium chicken broth
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 tbsp olive oil or butter
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a baking dish with nonstick spray.
- In a skillet, heat the olive oil over medium heat. Add the diced chicken breasts and season them with salt and pepper. Cook until golden brown, about 7-10 minutes.
- During the last few minutes of cooking, stir in the broccoli florets until they become bright green yet crisp.
- In a large bowl, mix the cooked chicken and broccoli with the uncooked rice, seasonings, chicken broth, and half of the shredded cheese.
- Transfer the mixture to the prepared baking dish, cover it with foil, and bake for 30 minutes.
- Remove the foil, sprinkle the remaining cheese on top, and bake uncovered for an additional 10-15 minutes until bubbly and golden.
Notes
For best results, don’t overcook the chicken and measure the rice correctly to achieve the perfect texture.
