Description

A comforting all-in-one dish combining chicken, broccoli, and rice with a delicious cheesy topping.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh broccoli florets
  • 1 cup uncooked long-grain rice
  • 2 cups shredded cheese (cheddar and mozzarella blend)
  • 2 cups low-sodium chicken broth
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil or butter

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish with nonstick spray.
  2. In a skillet, heat the olive oil over medium heat. Add the diced chicken breasts and season them with salt and pepper. Cook until golden brown, about 7-10 minutes.
  3. During the last few minutes of cooking, stir in the broccoli florets until they become bright green yet crisp.
  4. In a large bowl, mix the cooked chicken and broccoli with the uncooked rice, seasonings, chicken broth, and half of the shredded cheese.
  5. Transfer the mixture to the prepared baking dish, cover it with foil, and bake for 30 minutes.
  6. Remove the foil, sprinkle the remaining cheese on top, and bake uncovered for an additional 10-15 minutes until bubbly and golden.

Notes

For best results, don’t overcook the chicken and measure the rice correctly to achieve the perfect texture.
