Description

A comforting and creamy dish combining chicken, broccoli, cheese, and rice, perfect for weeknight dinners and gatherings.


Ingredients

  • 2 cups cooked white or brown rice
  • 2 cups cooked and chopped chicken breast
  • 2 cups broccoli florets, steamed until tender
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup milk
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs (optional)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cooked rice, chicken, and steamed broccoli.
  3. In a separate bowl, mix the cream of chicken soup, milk, olive oil, garlic powder, onion powder, salt, and black pepper until smooth.
  4. Pour the soup mixture over the rice, chicken, and broccoli. Stir to combine thoroughly.
  5. Transfer the mixture to a greased 9×13 inch casserole dish.
  6. Sprinkle the shredded cheddar cheese evenly over the top.
  7. If desired, mix breadcrumbs with Parmesan cheese and sprinkle over the casserole for a crunchy topping.
  8. Place the casserole in the preheated oven and bake for 30 minutes, or until heated through and the cheese is bubbly and golden brown.
  9. Remove from the oven and let it cool for a few minutes before serving.

Notes

For best results, do not overcook the broccoli and ensure the mixture is well combined.
