- 2 cups cooked white or brown rice
- 2 cups cooked and chopped chicken breast
- 2 cups broccoli florets, steamed until tender
- 1 cup shredded cheddar cheese
- 1 can (10.5 oz) cream of chicken soup
- 1 cup milk
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup breadcrumbs (optional)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the cooked rice, chicken, and steamed broccoli.
- In a separate bowl, mix the cream of chicken soup, milk, olive oil, garlic powder, onion powder, salt, and black pepper until smooth.
- Pour the soup mixture over the rice, chicken, and broccoli. Stir to combine thoroughly.
- Transfer the mixture to a greased 9×13 inch casserole dish.
- Sprinkle the shredded cheddar cheese evenly over the top.
- If desired, mix breadcrumbs with Parmesan cheese and sprinkle over the casserole for a crunchy topping.
- Place the casserole in the preheated oven and bake for 30 minutes, or until heated through and the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
For best results, do not overcook the broccoli and ensure the mixture is well combined.
