- 9 oz cheese tortellini
- 1 lb ground beef
- 1 cup enchilada sauce
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the tortellini according to package directions and then drain them.
- In a large skillet, brown the ground beef while adding the chopped onion and bell pepper. Season this mixture with garlic powder, cumin, salt, and pepper.
- Combine the cooked tortellini with the beef and vegetables in the skillet, mixing well.
- Spread 1/2 cup of enchilada sauce at the bottom of a baking dish.
- Fill your tortillas with the tortellini and beef mixture, rolling them up tightly and placing them seam side down in the baking dish.
- Pour the remaining enchilada sauce over the tortillas and sprinkle shredded cheese on top.
- Bake for 20-25 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh cilantro, if desired, and serve hot.
Notes
Serve with Mexican rice, guacamole, or a light salad to complement the dish.
